"Spotting the Warning Signs: How to Tell If Your Seafood is Spoiled"

When buying seafood, there are several red flags to watch out for to ensure freshness and avoid spoilage. These include lack of visual appeal, such as cloudy or sunken eyes, and improper odor, as fresh fish should smell like the ocean. Squishy or slimy texture, brown gills, curled tail, torn belly, and open shellfish are also signs of potential spoilage. Missing or old tags, dry shells, and unlively crustaceans should be avoided. Suspicious shrimp with dry appearance or black spots should also be avoided. It is important to establish a relationship with a trusted fishmonger and ask questions about the seafood's source and freshness.

"The Science Behind the Pungent Odor of Fish"

The strong fishy smell is caused by microbial and chemical reactions that occur as fish proteins and fats are exposed to heat and oxygen over time. Bacterial growth and lipid oxidation are the main culprits. To minimize the fishy smell, it is important to minimize the time between catching the fish and cooking it, and to keep it at low temperatures. Freezing can slow bacterial growth but does not stop lipid oxidation. Vacuum-packed and frozen fish are good options for freshness. Low-fat fish are best for freezing, while fatty fish should be stored in low-oxygen containers or canned. Leftover cooked fish should be consumed quickly to avoid further oxidation.

Pastrami worth 2,000 pounds spoiled due to power outage at Bay Area restaurant.

A power outage caused by Tuesday's storm in Berkeley has forced Delirama, a popular sandwich shop, to discard 2,000 pounds of brisket used to make its famous pastrami sandwiches. The loss may cost the shop up to $100,000 in revenue. The shop is launching a GoFundMe page to help pay for the wasted pastrami and buy a commercial generator to keep the refrigerator online during any future outages. Delirama may not be able to remain open in the longer term, co-owner Cash Caris said.
