A study conducted by researchers from Nagoya Institute of Technology in Japan has found that the choice of glazing on ceramic tea sets used to prepare tea can significantly impact the retention of catechin flavonoids, which are beneficial compounds found in tea. The study revealed that glazes on tea sets, such as Oribe, Namako, Irabo, and Toumei, can oxidize catechins, reducing their concentration and altering the flavor, aroma, and health benefits of tea. The specific metal oxide species present in the glazes play a role in this oxidation process. The findings highlight the importance of considering glaze materials in ceramic tea sets for preserving the health benefits of tea.
